1. Prepare Beef Lo Mein according to package directions in a large stockpot.
2. Add mushrooms, sugar snap peas, beef broth and soy sauce. Bring to a boil, reduce heat and simmer until vegetables are tender, about 10 to 15 minutes.
3. Garnish with sliced scallions.
